breakfast in 2.5 secs


I've never been a huge fan of french toast (maybe it's the weird texture the cooked egg forms on the bread?), but I had a request for stuffed french toast and this recipe popped up quite conveniently on the g.reader earlier. I'm trying to be more adventurous with new recipes, so french toast making began...


stuffed french toast (starring farmers' market peaches)

filling
     3-4 tablespoons cream cheese
     2 teaspoons cinnamon
     1 tablespoon powdered sugar 
     1 teaspoon vanilla extract

4 slices bread (I used cinnamon raisin Ezekiel bread)
2 eggs
1/4 cup milk
1-2 teaspoons cinnamon
1 teaspoon vanilla extract
fresh peaches (or other fruit of your choice)

Warm cream cheese and stir together with remainder of filling ingredients. Whisk egg, milk, cinnamon, and vanilla extract together. 

Dip 1 slice of bread into egg mixture. Spread filling and place peaches on top. Dip another slice of bread into egg mixture and place on top of first piece. Cook evenly on both sides in frying pan until desired doneness. 

The verdict? Pretty delicious, even for a non-french toast fan. And the recipe takes about 10 minutes, so  you'll be off to the beach in no time (way waay before anyone else gets there). 


Or the farmers' market. After which you may decide to make sandwiches featuring all the vegetables you just bought with fresh bakery bread, homemade hummus, and red pepper aioli


I love summer; as much as some of the weather has been borderline unbearable, I know I'll be complaining when it's -3 with 2 feet of snow. So thankful to be able to take advantage of fresh food and  days full of beach and sunshine. This mostly happens on the weekend, which is part of the reason I look forward to Friday so much.

    I also love summers because of fresh produces and fruits! They're the best!

  3. YUM! Its been way too long since I've had French toast (and I do love it, actually). Thanks for the recipe Emily! It's raining here, but I'm trying to get outside sometime today, since I was working on the last two GORGEOUS days.

  6. Love summer produce! I haven't made french toast in ages, but I did make some homemade red pepper hummus this weekend. Since it's pretty much unbearably hot here during the day I spend most of it inside in the kitchen (w/o the oven on) :)

  7. I love stuffed French toast, but I have never made it myself. I will have to give it a try some time. I was in fact able to spend time outside eating delicious food. I went to the Nebuta festival in Aomori City (Japan), which is the biggest festival in this prefecture. The weather was great and the food was good too.

  8. If I had another lifetime job it would be to sample produce and goods at farmer's markets and make up recipes on the spot with teams of local foodies.
    I love hummus with avocado and lime and I know this sounds pretty funny, but also an apple in there...

  9. I am a HUGE French toast fan and I am also hungry right at this moment...this is such a droolworthy post. Beautiful sandwich too, but I'd opt for breakfast. ;-)

  10. GAH that stuffed french toast looks delicious! I looooove breakfast food, and french toast happens to be a particular favorite of mine :) I've never actually had stuff french toast, though, because it always seems like a plate full of sugar overload, but your cream cheese filling sounds delicious and not too sweet at all!
