You might not be able to fully grasp how crazy the snow was in Chicago from this photo, but any car parked on a side street got completely buried. Most people had already taken a shovel to their vehicles at this point…

I can tell you that after living for almost a week on hotel and restaurant food, I was craving fresh vegetables like crazy! I think I chopped up every single vegetable in the refrigerator when I got back today.
Roasted with a little bit of olive oil, parmesan cheese, and pepper at 450 F for 30(+) minutes, I couldn’t have asked for anything more…
Except homemade [vegan] peppermint ice cream. If it’s zero degrees outside, why not make myself even colder by eating ice cream. It makes perfect sense.
I’m exhausted! Another cooking class coming up next week…plus some big changes ahead.
Does anyone else crave vegetables after being on the road?
I can’t be the only one!

ReplyDeleteOh, and I totally eat ice-cream when it snows. There is never a bad time for ice-cream, seriously. You aren't the only one to crave veggies either - my body lets me know about it when I haven't been eating enough. I think we only need to worry when we start combining the two and eating veggie ice-cream!

I definitely do! There's nothing like a plate of roasted veggies. And my mom used to make ice cream sandwiches using sugar cookies and peppermint ice cream... SO good!!

The veggies were a necessity since I ate Good & Plenty's and unsalted pretzels all the way home!Three cheers for roasted veggies and peppermint ice cream. Yum!

ReplyDeleteAfter my non-stop travel in January, all I wanted was bananas. Real bananas, from a bunch, on cereal and oatmeal and everything I can find.
OH gosh, I definitely crave veggies when I get back from vacations!! Even when I travel for work I go into vegetable withdraw, it stinks.
