snow running & a recipe…

Thanks for the great responses to the commuter cycling post. Check it if you haven’t yet!

It has been a super busy week. Sometimes the best stress relief is a good run, even if there is a lot of snow outside, drivers don’t want to share the road with you…and you get sprayed by the snow plow.

Another thing that can ease stress after a busy day is a quick meal. This recipe was a little tricky for me to write out because I don’t usually measure anything…I just mix until things look right and taste good.

  • 1 (14 oz) can black beans, drained and rinsed (rinsing for 30 seconds can remove 30% of the sodium).
  • 1/4 cup whole wheat flour
  • 2-3 T olive oil
  • 1-2 cloves of garlic
  • 1/4 cup crackers, crushed
  • 1/4 cup salsa
  • pepper to taste

And here are my secret weapons…pastry cutters are traditionally used for making delicious pies, but they’re also great for mashing up black beans. Also, a jar lid greased with a little cooking spray is the best way to make burgers of uniform size that won’t fall apart. Any other helpful hints?

Heat 1-2 T of olive oil in a pan and cook burgers for 3-5 minutes on each side (depending on thickness). Top with a little guacamole for perfection.

Oh…my other favorite thing about winter is scraping the snow off the roof. It’s about as much fun as it sounds. And yes, the snow is up to my knees!

Alright…confession time. Are you a diehard outside exerciser, or do you stay inside in the winter?!

    I do probably 75% of my exercising outdoors in the winter. Cold doesn't bother me so much as unplowed roads. I hate the feeling of my feet and ankles sliding around in the mush.

  5. This recipe looks so easy and tasty! I love black bean burgers, but I've never tried to make them myself. Now I'll definitely have to!

    I definitely prefer to stay inside during the winter. I wish I was hardcore enough to exercise outside, but I can't stand the cold!

    I pretty much always exercise indoors. I live in Vegas, so it never gets TOO cold here, but I always prefer being inside.

  7. Your burgers look great! I make black bean burgers with quinoa, but I haven't made them in a while. I'll have to put some black bean burgers on the menu soon!

  8. These burgers look very yummy! I can't believe how much more snow you have by the lakeshore! The older I get the more wimpier I am about the cold, but once I get myself sufficiently bundled I'm good to go outside.

  12. I'll admit it, I stay inside! I'm not a runner, and I know if I walk outside I have to go twice as long to get a good workout, so I just use the elliptical :) In fact Nick and I just got a new one last night!! I'm so excited to use it. It's still in the garage right now because it won't fit through the front door...yikes.
    Nick and I have gone on a couple late night walks, plus we take turns riding the bike, so I DO get outside...sometimes. I think it's great that you are still running outside!!

  14. When we did our black bean burgers I had made homemade buns, and they were a little mini, so we used measuring cups to make the burgers, and we sprayed with a little pam. I think we used the 1/4 and 1/3 cups. I filled with 1/3 cup, maybe 1/4 inch thick and then smashed down with the 1/4 cup. The were the perfect size for the buns.

    I exercise in the winter, but not outside. I go to the gym, but I can't complain, our base gym has nice glass windows that overlooks the ocean.

    I'm an avid exerciser, but I hate the cold!!! So while I have access to treadmills and stationary bikes, I use them. My dream is to someday live in a place where I can run outside without experiencing that frozen burning feeling in my lungs.

  18. I often use a potato masher to mash my beans/chickpeas but a pastry cutter makes way more sense! Definitely trying it next time :)

  19. I still can't believe you got sprayed with the snow plow! :( and drivers can be so rude sometimes! such a great idea to use a pastry cutter for mashing. I usually use a fork, which works, but is not really efficient. Those burgers look very tasty! I can handle cycling when it's around 35 & no snow, but any colder and I'm a wuss on the trainer or in the gym! brrr

  21. Salsa in black bean burgers is super tasty! Plus avocado can't ever be wrong...

    I run outside pretty much year round...no access to a treadmill (and a severe hatred for the treadmill...) limits my choices. :)

  22. im such a wimp when it comes to bad weather...we got even more snow today in st. louis & it took me all morning to get myself out of the house!! wishing i could spend the day at home with hot chocolate & marshmallows :)

    love your black bean burger recipe...ive never made my own before but i should follow your lead again!!
